Implementing a Salmonella Monitoring Programme for Pork in Germany

چکیده
The history of the development of a national Salmonella monitoring system and its implementation as the “Salmonella Monitoring and Reduction Programme” in the framework of the development of the voluntary German “Quality and Safety System” (= “QS-System”) for food production beginning with the pork production chain is explained. Especially the necessary steps that need to be taken to achieve the acceptance for the implementation of an industry-wide programme in a non-integrated pork industry are alluded to.

Non-typhoidal Salmonella infections in pigs: a closer look at epidemiology, pathogenesis and control.
Contaminated pork is an important source of Salmonella infections in humans. The increasing multiple antimicrobial resistance associated with pork-related serotypes such as Salmonella Typhimurium and Salmonella Derby may become a serious human health hazard in the near future. Governments try to anticipate the issue of non-typhoidal Salmonella infections in pork by starting monitoring programme...
متن کاملSerological and Epidemiological Investigations for Analysing Risk Factors of Salmonella Infections in Pig Herds
Introduction and Objectives Salmonella causes important zoonotic diseases. Nearly 20 % of human salmonellosis in Germany are due to pork products (Steinbach et al., 1999). Salmonella contamination of food can occur in the primary production, at the slaughter and in the food production chain. In some countries Salmonella surveillance and control programs were implemented few years ago. In Denmar...

An ambitious programme to eliminate pork as an important source of human salmonellosis was initiated in Denmark in 1993 by the Ministry of Food, Agriculture and Fisheries. The programme comprises control of feedmills, breeding and multiplying herds, slaughter herds and slaughter plants, as well as the final product, fresh pork. As a consequence, the level of occurrence of Salmonella spp. in fre...
متن کاملSalmonella in the Pork Production Chain
There is currently an explosion of research activity on food safety, including Salmonella contamination of pork and pork products. Salmonellosis is considered to be one of the most common foodborne illnesses in humans, with worldwide distribution and increased incidence in the United States during the last years (CDC,2000). Reasons for this include; increased public awareness of microbiological...
متن کاملOutbreak of Uncommon O4 Non-Agglutinating Salmonella Typhimurium Linked to Minced Pork, Saxony-Anhalt, Germany, January to April 2013
INTRODUCTION In January 2013, the National Reference Centre for Salmonella (NRC) detected a salmonellosis cluster in Saxony-Anhalt, Germany, caused by uncommon O4 non-agglutinating, monophasic Salmonella (S.) Typhimurium DT193. Circulating predominant monophasic S. Typhimurium DT193 clones typically display resistance phenotype ASSuT. We investigated common exposures to control the outbreak, an...
